A bakery built around time

Our loaves begin with flour, water, salt and a living culture. We mix in small batches, ferment slowly and bake throughout the morning. The aim is not uniformity for its own sake, but consistency in flavour, texture and keeping quality.

The city’s cool climate rewards attentive fermentation. We adjust dough temperature, proofing windows and hydration by season, preserving the character of each flour while keeping the daily bread dependable.
