Functional score

A confident primary cut at an appropriate angle supports a pronounced ear and controlled opening.

Decorative score

Shallow patterns can mark the surface without directing major expansion. They work best when separated from the functional cut.

Safety and timing

Use a sharp blade, stable loading surface and decisive movement. Score immediately before the loaf enters the oven.
