Before commercial yeast

For most of bread history, bakers relied on naturally maintained cultures. Each region developed practices around local grain, water, climate and household routine.

Why it tastes different

Organic acids, fermentation by-products and long enzymatic activity create layered aromas that cannot be reduced to simple sourness. Good sourdough balances sweetness, acidity, grain flavour and roast notes.
