Safety first

Fresh discard with a clean fermented aroma can be refrigerated for short-term use. Any culture showing mould, pink or orange growth, or a putrid smell should be discarded completely.

Good applications

Crackers, pancakes, waffles, flatbreads and savoury batters use discard particularly well because they do not depend on it as the sole raising agent.

Formula adjustments

Discard contains both flour and water. Deduct these quantities from the base recipe to keep hydration and texture predictable.
